Lunch from the Woods

Who would have throught that two young men, a walk in the woods, and some crazy ideas from India would have resulted in an amazing lunch?

Gathering Stinging Nettle leaves


Into the pot and boiled until completely wilted to destroy the silica needles that deliver a sting.

The Water from boiling nettles makes a good, micronutrent rich tea:
And, finally, into the pot for an amazing Nettle Currey:


The recipe:

200 gm nettles, boiled

1 can tomatoes plus green chilies

2 links mango chicken sausage

½-1 onion

½ cup mozzarella cheese

2 garlic cloves

ginger

garam masala

tumric

coriander

cumin

chili powder

salt

lime

nuts

Fry the sausage and onion, while boiling the nettles, tomatoes and chillies. Add spices to the sausage and onion skillet. Combine, and serve. Add nuts and Lime to individual servings as garnish.
